Sunday Food Prep Day
As always, Sundays are for food prep! I had a couple of other things (two vacations) to pay for this week so I made it a point to take a good inventory of what I had in my fridge and freezer so as to minimize what I NEEDED to buy at the grocery store.
Before Thanksgiving the grocery store only had 13 pounds turkeys and we were hoping for bigger. Since beggars can't be choosers we bought the turkey, but as luck would have it, a few days later (just a couple days before Thanksgiving) the store got a new shipment of 20 pounds turkeys! So, we stuck the 13 pound turkey in the freezer and cooked the bigger one. Well, Friday when we were preparing our grocery list and going through the fridge and freezer we discovered the 13-pound turkey! So I said "what the heck!" and decided to have turkey for lunch this week.
The "family size" package of green beans in the freezer has lasted me the past 3 weeks and I finally used up the remainder for my lunches this week. For breakfast I decided to use up some Trader Joe's Spicy Italian Chicken Sausages I had in the freezer and pair it with an avocado. Dinner will be either more Chicken Sausage or eggs and bacon. It feels good to use up what we already have AND save a few dollars in the meantime!
